A typical shift

Take the handover from the operator going home and read the log. Walk the plant: check pumps, filters, chemical tanks and flows with your own eyes, not just the screen. Pull samples and run the tests, then adjust chemical doses to match what the water is doing today. Fix whatever broke. Record everything, because the state will read those records. Then it is quiet, until an alarm sounds and it very much is not.
