A typical day

Mornings are usually in the pilot plant or the lab: making trial batches, changing one ingredient at a time, measuring texture, moisture, acidity and colour. Late morning is often a taste panel. Afternoons are meetings with marketing about what the product has to cost and claim, and with the plant about whether the line can actually make it. Plus the standing work of any food job: checking that shelf life data, supplier specs and labels all line up.
