A typical day

Arrive early afternoon for a dinner service. Prep for hours: butchering, sauces, vegetables, stocks. Service is a sprint of 3 to 5 hours at high speed and high heat. Then cleaning and closing, often past midnight. Weekends and holidays are your busiest days. Institutional and camp kitchens run on calmer daytime schedules.
